Hot pasta sauce

My jet-setting sister gave me this book for christmas – Pork & Sons by Stéphane Reynaud. The recipes are simple (i.e. doable) and look like they were contributed by locals. Lovely lovely lovely.

Before I take a break for the hols, here’s a recipe for a spicy tomato chorizo pasta sauce that stores well and that you can keep adding to. It’s one of my faves.

Slice 2-3 chorizo sausages into chunky coin size pieces. Lightly sauté in the pan to colour and release oils. Set chorizo aside.
Bit more oil, then add into the pan finely diced 1-2 large onions and salt. Cook till onions are translucent but not mushy.
Add chilli (flakes or fresh chopped), garlic and anchovies(optional).
Add glugs of red wine, and cook out the alcohol. Heavier reds are better.
Then add 1-2 cans of tomatoes (I prefer whole roma tomatoes in cans, roughly chop the tomatoes) or 1 large can, or a few fresh tomatoes chopped finely, depending on how much sauce you want to make,
and a good dollop of tomato paste.
Bit o’ paprika for depth. One or two bay leaves.
Add more wine if sauce is too dry for your liking. I usually add half a cup, or a light stock.
Return chorizo to the sauce and simmer for 45 mins-1 hour to reduce.
Salt and pepper to taste.

If the sauce is too sour, add a bit of balsamic vinegar or Worchestershire sauce.

The sauce keeps for ages in the fridge. Tastes better the next day. You could add mushrooms or chopped black olives or even substitute ground meat instead of choriza (that would make it a Bolognese sauce).
